This summer I have been experimenting with different type of recipes to create that perfect popsicle. An ice popsicle that isn’t too watery, but also not too thick since I noticed these melt too fast. I also wanted to add some extra goodness to my popsicles so I added chia seeds. Today I’m sharing my favorite popsicle recipe with you. I love these mango hibiscus popsicles because mangoes taste amazing when frozen. Such a delicious summer treat!
I have to admit, this summer I became a bit obsessed with getting the right popsicle molds. I created already so many recipes in my head, but I had (according to me) not the right popsicle molds. I have kid size plastic (BPA-free) popsicle molds, but I wanted to get my hands on the stainless steel bigger size molds. I finally managed to find them and I couldn’t be happier. Can you blame me? The variations on what I can create are endless. Smoothies, fruit, chocolate, chia seeds, nut butters… There are so many foods to work with!
Speaking off obsessions. Another thing I have been drinking a lot lately is hibiscus tea. I noticed hibiscus tea is also very delicious when cooled off. This tea is therefore perfect to create a popsicle with. And it makes a great match with mangoes. That’s the fun part about making your own popsicles, you can basically freeze anything you like… Almost anything. Maybe you like a nutty chocolate popsicle or maybe you like to freeze your smoothies?
Chia seeds are the secret ingredient that allows the hibiscus tea to bind and gives the popsicles a nice texture and bite, while also adding some fiber, protein, and good fats. I love to use chia seeds in popsicle recipes because they give the popsicles a nice creamy texture.
I didn’t use any extra ingredients to sweeten up these popsicles such as a date (syrup) or maybe maple syrup, because I find mangoes to be already deliciously sweet. However feel free to add a splash of a sweetener if necessary. If your hibiscus tea seems to be too strong for you I can recommend to add a tablespoon of lemon or lime juice to make the hibiscus tea less bitter. I find cool hibiscus tea with lemon juice really delicious.
You can use any popsicle mold of course, but I find these stainless steel molds amazing!

- 300 ml boiled water / 1,5 cups freshly boiled water
- 6 teaspoons chia seeds
- 2 fresh mangoes
- 1 hibiscus tea bag
- Start by making the tea.
- Take the bag out of the tea and add in 6 teaspoons of chia seeds. Stir well and let soak for 15 minutes, or until a thick gel forms
- Meanwhile cut the mangos in pieces and blend to create mango puree.
- Take out yourpopsicles molds and add a layer of mango puree followed by a layer of chia hibiscus pudding. Tap the molds on the counter between each layer to remove any air bubbles. Continue until the popsicles molds are full.
- Place in the freezer over night or for at least 4 hours.
