Summer Slaw Salad with Peaches with Creamy Baobab Dressing

The dressing, seeds and fruits make this slaw salad a refreshing summer treat.

Ingredients
  • SALAD:
  • 4 cups of shredded cabbage {I used purple but a mixture of purple and green is also delicious}
  • 1 peach or nectarine, sliced thin
  • ½ cup fresh parsley, chopped
  • ½ cup scallions, diced small {optional}
  • 3 tablespoons raw apple cider vinegar
  • ground black pepper, to taste
  • ½ cup sunflower seeds
  • 2 tablespoons hemps seeds to sprinkle
  • DRESSING:
  • ¼ cup cashew butter (or tahini)
  • ¼ cup coconut aminos
  • 1 teaspoon Baobab powder
  • ½ teaspoon grated garlic
  • ½ teaspoon minced ginger
Instructions
  1. SALAD:
  2. Combine all of the ingredients {except sunflower seeds and hempseeds } in a large mixing bowl. Mix thoroughly and plate. Top with sunflower seeds and hempseeds.
  3. DRESSING:
  4. Blend all ingredients in a food processor or blender.
  5. Drizzle over salad.
