Making a sweet dish out of avocados? The idea never appealed to me. Frozen avocado? Ieuw! Avocado to make a chocolate mousse? No, thank you. However, knowing how great avocado works in sweet recipes I had to give it a try. And I couldn’t have been more wrong. I made this delicious pistachio ice cream that was gone in just a few minutes…oops.
This ice cream only contains natural fats, it’s dairy free, gluten free, free of refined sugars, vegan, raw…it’s all goooood!
TIP: It’s better to use organic, raw, unsalted and unroasted pistachios.
- half a frozen avocado/or one entire avocado (depending on the size)
- one frozen banana
- little handful of pistachios
- Place all ingredients in a blender or food processor and blend for at least one minute.
Don't 'over freeze the avocado. If you can manage (time wise), freeze it only for 1 to 2 hours.
