Pistachio Ice Cream

Making a sweet dish out of avocados? The idea never appealed to me. Frozen avocado? Ieuw! Avocado to make a chocolate mousse? No, thank you. However, knowing how great avocado works in sweet recipes I had to give it a try.  And I couldn’t have been more wrong. I made this delicious pistachio ice cream that was gone in just a few minutes…oops.

This ice cream only contains natural fats, it’s dairy free, gluten free, free of refined sugars, vegan, raw…it’s all goooood!

TIP: It’s better to use organic, raw, unsalted and unroasted pistachios.

Ingredients
  • half a frozen avocado/or one entire avocado (depending on the size)
  • one frozen banana
  • little handful of pistachios
Instructions
  1. Place all ingredients in a blender or food processor and blend for at least one minute.
Notes
If your blender/food processor can't seem to handle the frozen ingredients, simple add little by little some milk (almond milk).
Don't 'over freeze the avocado. If you can manage (time wise), freeze it only for 1 to 2 hours.
