Super Snack Bites

Bliss balls, energy balls, energy bites…we all know them by now. The last weeks have been crazy and I needed all the energy and bliss balls of the world. Big changesa move and a lot of work made it sometimes a struggle to eat healthy.  Eating vegan is always possible, always. No problem at all, however eating healthy vegan food, that’s a whole new ..uuhm ball game. During my move the movers would dig into a Turkish sandwich or a chicken satay. So what did I have? I went to the nearby burger restaurant and asked, with my most charming smile ever, if I could get a vegan burger to take. Healthy? Nope.

And then the snacks. I needed my snacks more than ever! There are plenty of juice bars in the neighborhood, but something on the go was still easier to make myself.

I made a batch of these Super Snack Balls twice. They are incredibly tasty, very filling and they’ll give you energy for hours. Exactly what I needed.

For approximately 11 Super Snack Balls, you’ll need the following

  • 1 cup medjool dates (remove the pit)
  • 1 cup of walnuts
  • half a teaspoon of coocnut oil
  • half a teaspoon of chia seeds
  • half a teaspoon of hempseeds (bee pollen would also make a good alternative)

Mix everything in a food processor and make nice round balls of the  sticky ”batter”. You can eat them directly, but they are very heavy on the stomach and also very sticky. It is better to put them in the freezer for at least an hour before you eat them.
