INGREDIENTS NO BAKE BROWNIE BITES

Buckwheat: Buckwheat groats are used as the base of the recipe, they add a nutty flavor and a texture that mimics traditional brownies.

Medjool dates: Medjool dates are used to add a natural sweetness to the recipe and also to bind the bites together. They are a great alternative to refined sugar, and they are also a good source of energy.

Cacao powder: Cacao powder is used to add a rich and intense chocolate flavor to the recipe.

Vanilla extract: Vanilla extract is an optional ingredient, it is used to add a subtle vanilla flavor to the bites and I can highly recommend it.

Extra cacao powder for rolling (optional): This is also an optional ingredient, it is used to roll the bites in to give them a more decadent look and also adds more chocolatey flavor.

Rinse 1 cup of buckwheat groats in a fine-mesh strainer and add to a pot. Bring to a boil. You can read here how to cook buckwheat. Once cooked, drain any excess water and set aside to cool.

To a high-speed blender with a tamper or food processor, add the dates and process until they form a sticky paste. Then add the cooked buckwheat

Process until the mixture is well combined and forms a sticky dough. Scrape the sides if needed and blend again. Add the cacao powder too and pulse until well combined.

Step 3.
Once blended it’s best to place the mixture in the fridge for at least 20 minutes so it can become a bit more firm.

Use a spoon or a cookie scoop to form small balls out of the dough. You should get about 10-12 bites.

If desired, roll the bites in extra cacao powder to coat the surface, giving them a more decadent look.

FREQUENTLY ASKED QUESTIONS

Can I use a different type of sweetener instead of Medjool dates?

Medjool dates are used in this recipe because they add a natural sweetness and a sticky texture that helps to bind the bites together. If you prefer, you could try using another type of sweetener such as maple syrup, but keep in mind that the texture and flavor of the bites will be different.

Another option is to use other dried fruits, such as plums, figs, apricots or peaches.

Can I use a different type of grain instead of buckwheat groats?

Buckwheat groats are used in this recipe to add a nutty flavor and a texture that mimics traditional brownies. Other types of grains such as oats or quinoa may work, but the texture and flavor will be different. Also, buckwheat is not a grain.

Are these bites gluten-free?

Yes, this recipe is gluten-free as it uses only buckwheat groats, which are gluten-free.

How long will these bites last?

These bites can be stored in an airtight container in the refrigerator for up to 5 days. I don’t advise to freeze them.

Does it matter if I use roasted buckwheat or unroasted buckwheat?

The type of buckwheat you use in this recipe can affect the final taste of the bites.

Unroasted buckwheat groats, also known as “raw” or “green” buckwheat, have a mild, nutty flavor and a light-colored appearance and they are often used in salads, soups and in sweet recipes.

Roasted buckwheat groats, also known as “kasha“, have a stronger, toasted flavor and a darker appearance and they are often used in savory dishes, like pilafs and as a side dish.

Both types of buckwheat can be used in this recipe, but the taste will be different. Using unroasted buckwheat will give a milder, nuttier flavor to the bites, while using roasted buckwheat will give a stronger, toasted flavor.

Also, in terms of texture, the unroasted buckwheat is more tender than the roasted one, so it will give you a smoother texture and it’s easier to blend with the other ingredients.

Ultimately, it is a matter of personal preference and what you have available. Both types of buckwheat will work well in the recipe, and it’s good to experiment and see which one you prefer.
