Spring has sprung, and asparagus are available again. These asparagus with puff pastry with vegan cheese, garlic, and mustard are ready in less than 10 minutes to be baked until golden brown and crispy with melting cheese and roasted asparagus as the final result.

WHAT IS PUFF PASTRY?

Puff pastry is thin dough (rolled-up pastry) made with flour, water, salt, and oil or butter. It is often accidentally vegan and available in round or square shapes. Pâte feuilletée is another name for puff pastry. It all comes down to the same technique: a flaky, light pastry made with laminated dough repeatedly folded and rolled out before baking. In essence, puff pastry is many layers of dough and butter.

As you can imagine, it can be convenient to buy this store-bought puff pastry instead of making it at home. Of course, it’s possible, but it will be time-consuming. Luckily, many supermarkets offer vegan puff pastry. Once at room temperature, it’s such a pleasant product to work with. It’s forgiving and very versatile.

HOW TO USE STORE-BOUGHT PUFF PASTRY?

All you have to do is roll out the puff pastry, but the temperature is essential. The puff pastry can tear and break straight out of the fridge (cold). But when the puff pastry gets too warm, it will also be challenging to work with. The best temperature is room temperature, so take it from the fridge about 5 minutes before you need it and work quickly, so the puff pastry doesn’t get too warm. This will ensure the puff pastry is easy to work with and can beautifully puff in the oven.

ASPARAGUS WITH PUFF PASTRY

These puff pastry bundles are filled with asparagus brushed with garlic and lemon juice. These bundles are also filled with a layer of maple syrup and mustard and a slice of vegan cheese.

Asparagus pairs very well with cheese, lemon, garlic, and the tangy flavor of mustard. The sesame seeds and salt add that extra touch of flavor and texture.

INGREDIENTS FOR ASPARAGUS WITH PUFF PASTRY

These puff pastry asparagus bundles are so fun to make and versatile. While this recipe is irresistible, there are many ways you can adjust the recipe to suit your taste.

Puff Pastry
You can use any brand you prefer or make puff pastry yourself. If you want to keep this recipe vegan, check if the puff pastry is vegan. Some puff pastry is made with eggs and butter, but many brands are accidentally vegan.

Asparagus
This beautiful spring vegetable is one of the main ingredients. They need to be washed and with the stalks trimmed off. Green asparagus is best for this recipe: either thin or thick spears. The thicker spears might need a bit more trimming. The thicker ends can be a bit chewy when it’s too thick.

Grainy mustard and maple syrup
This mixture is a vegan version of honey mustard. This layer is optional, but I can recommend it (especially if you generally love mustard). The maple syrup in this recipe balances out the mustard and cheese flavor.

A bit of olive oil will keep the asparagus crispy and juicy, while the garlic gives an extra depth of flavor. The lemon juice serves as a beautiful flavor enhancer in this recipe with garlicky asparagus. 

Vegan cheese
What is better than roasted asparagus with puff pastry? Roasted asparagus covered in perfectly melted bubbly cheese. Which vegan cheese you use is totally up to you, but if I can recommend you any vegan cheese, it would be vegan Gouda (my favorite for this recipe), vegan Brie, vegan cheddar or vegan Parmesan. But if you have vegan Boursin or any other vegan cheese spread in your fridge, feel free to use that instead. 

Sesame seeds and salt topping
A topping is optional, but sesame seeds add a bit of extra texture and make these bundles look even more inviting. However, you can also serve these bundles without it or use Everything Bagel Seasoning Blend.

Oat milk and maple syrup
The combination of plant-based milk with a sweetener serves as a vegan ‘’egg wash’’ in this recipe. It serves both for color and to bind. The result? A crispy golden puff pastry bundle.

I like to add a hint of sweetness to savory or garlicky recipes as it balances out all flavors. 

Black pepper and salt
The mixture for the asparagus contains black pepper and salt for extra flavor. If you want to reduce the salt in this recipe, you can omit the salt in the sesame seeds topping.

HOW TO MAKE ASPARAGUS WITH PUFF PASTRY

These asparagus with puff pastry bundles are simple and fun to make. Watch the video and follow the steps in the photos so your asparagus will come out perfectly bundled and golden brown out of the oven.

Once you have all the ingredients ready to go, it’s time to take the puff pastry out of the fridge, and your asparagus puff pastry bundles will be ready for the oven in less than 10 minutes. Make the garlicky asparagus

Step 1.
Clean and trim the asparagus and preheat the oven at 180° C/ 356° F . Line a baking sheet with parchment paper and take the puff pastry out of the fridge.

Step 2.
In a small bowl, combine the lemon juice, olive oil, finely minced garlic, salt, and black pepper and stir to combine. Cover all the asparagus with a silicone pastry brush with this garlic mixture and set aside. Then in another small bowl, combine the mustard and maple syrup and stir to combine.

Bundle the asparagus in puff pastry

Step 3.
Roll out the puff pastry on parchment paper and cut the puff pastry into large squares. Cover each square with the mustard and maple mixture, followed by a few springs of asparagus and half a slice of vegan cheese.

Bake

Step 4.
Close the puff pastry bundles by crossing each corner up and over the asparagus. Press to seal the bundles. Brush a mixture of oat milk and maple syrup on the bundles.

Step 5.
Sprinkle with sesame seeds and salt and bake until puffed and golden brown.

The best is to enjoy these puff pastry bundles immediately to enjoy the melting cheese with the warm puff pastry combination. But these bundles are also delicious when they are slightly colder.

ASPARAGUS WITH PUFF PASTRY SUBSTITUTIONS

This recipe is forgiving and allows you to experiment with flavors and ingredients.

Instead of cheese, you can use a vegan cheese spread. And if you don’t want to use anything store-bought for the filling, homemade cheese, pesto, or hummus are also delicious fillings. A thin slice of smoked tofu is also a delightful alternative.

If asparagus is not your cup of tea, try broccolini’s instead or any other vegetable you like which isn’t too moist.

I have used whole grain mustard for this recipe, but feel free to use any mustard. And if mustard isn’t your thing, experiment and use a little bit of horseradish or wasabi.

The sweetener of choice for this recipe is maple syrup, but any liquid sweetener will work perfectly fine for these bundles.

You can make this recipe oil-free if you wish. The asparagus will be less crispy, but the recipe will still be delicious. For the oil-free version, omit the olive oil in the mixture for the asparagus and use a dark balsamic instead.

To make this recipe low-salt, omit the salt in the topping.

Lastly, feel free to add some extra flavors, textures, or herbs to this recipe. Finely chopped walnuts or pistachio makes a great topping. And chopped chives are also a topping option.

CAN YOU MAKE ASPARAGUS WITH PUFF PASTRY AHEAD OF TIME?

While these bundles are best served immediately out of the oven, they can be made a bit ahead of time. The assembling of the bundles can be done the day before. Follow the recipe below, but skip the vegan egg wash (plant-based milk and sweetener). Place the bundles on parchment paper, cover them tightly with saran wrap, and place them immediately in the fridge.

The next day, remove the saran wrap, brush on the vegan egg wash and bake the bundles in the oven according to the recipe below.

If you have leftover baked puff pastry bundles, you can keep the bundles in an airtight container in the fridge for up to 3 days. To reheat, place the bundles in the oven until well heated.

Puff Pastry Bundles

  • 1 sheet of puff pastry at room temperature
  • 1 bunch of asparagus, about 12 spears, ends trimmed
  • 2 tablespoons olive oil*
  • 45 garlic cloves, finely minced
  • 2 slices vegan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • juice of ½ lemon
  • 3 heaping tablespoons of whole grain mustard
  • 1 tablespoon maple syrup

To Brush (vegan egg wash)

  • 1/2 teaspoon maple syrup
  • 1/2 tablespoon oat milk

To Garnish (optional)


Instructions

Preheat the oven to 180° C/ 356° F. Line a baking sheet with parchment paper. Wash and trim the ends of the asparagus.

Brush the asparagus with lemon juice, olive oil, salt, garlic, and black pepper. Cut vegan cheese slices in half – so you have 4 thin slices in total.

In a small bowl, mix the whole grain mustard with the maple syrup.

Roll the pastry sheet out on a floured surface and use a pizza cutter to cut it into 6 or 8 squares (depending on size).

Spread 1-2 teaspoons of the mustard maple mixture over the middles of the pastry squares.

Layer the asparagus over the mustard, about 3-4 spears per bundle (depending on size). Place a slice of cheese over the asparagus.

Take 2 corners of the pastry, wrap them up and over the asparagus, and press to seal. Repeat with the remaining squares, then arrange them on the prepared baking sheet, leaving space between each bundle.

Combine oat milk and maple syrup to make ”vegan egg wash” and brush each bundle with this. Sprinkle the white and black sesame seeds with salt over each bundle.

Transfer to the oven and bake for 20-25 minutes or until puffed and golden brown. Sprinkle with more salt or extra mustard if desired, and serve immediately.


Notes

Puff pastry tips
When the puff pastry is too cold, it can easily tear, and when it’s too warm, it can become sticky, and it will not puff that beautifully in the oven. The best way to work with puff pastry is to take it from the fridge 5 minutes before you need it and work relatively fast when assembling these bundles. 

If you use frozen puff pastry, thaw it to fridge temperature but not room temperature. 

Cheese
If you don’t want to use store-bought cheese, feel free to use a homemade vegan cheese spread, homemade hummus, or homemade pesto. A thin slice of smoked tofu is also a delicious alternative.

Leftovers
Leftover baked puff pastry bundles can be kept in an airtight container in the fridge for up to 3 days. To reheat, place the bundles in the oven at 180° C/ 356° F for about 10 minutes or until well heated. 

Low salt
To make this recipe low-salt, omit the salt in the topping.

Oil-free
Without olive oil, the asparagus will be less crispy, but the recipe will still be delicious. For the oil-free version, omit the olive oil in the mixture for the asparagus and use a dark balsamic instead.
