Corn Celery Salad with Dill and Vegan Yogurt Sauce

This corn celery salad with dill is ready in minutes and makes a great lunch or side dish. The delicious yogurt sauce in this recipe makes all the difference! Easy to make, delicious, fresh, oil-free, and super versatile.

Although I’m writing this recipe in my shorts and flip flops I’m pretty sure fall is here pretty soon (like tomorrow). Soon most of my recipes will be more about the oven and my Instant Pot again (yay!). Meanwhile, I really wanted to share this corn celery salad with dill and vegan yogurt sauce with you. It’s so easy to make and a great addition to almost any dish. I have been enjoying this salad with baked potatoes and a lentil burger.

This corn celery salad with dill is done in a few minutes. I used organic frozen corn, but you can also use corn from a glass jar. Personally, I love fresh dill but you could try to substitute it for the dry version in this salad. If you are going to use dried dill, make sure to add a little more and taste test in between to make sure you are achieving the right flavor. It’s ok to taste the dill, but it shouldn’t dominate the salad.

And then the vegan yogurt sauce… this sauce (dressing or dip) is probably the easiest yogurt sauce I have ever made and I love it. It’s so fresh and so versatile. This one is for sure a yogurt sauce that I will make way more often. Any simple salad immediatly gets an upgrade with this delicious vegan yogurt sauce. You could use soy yogurt, but also almond- or coconut yogurt works perfect in this recipe. Super delicious without a drop of oil.

Ingredients

  • CORN CELERY SALAD:
  • 1/2 sweet white onion, cut in small chunks
  • 34 celery stalks (add more if you wish)
  • 1 1/4 cup / 220 gr corn (frozen or fresh)
  • fresh dill to taste, I used about 4 tbs freshly chopped dill
  • VEGAN YOGURT:
  • 1 cup (250 gr) vegan yogurt
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tbsp dried mint
  • 1 tsp garlic powder
  • pinch of sea salt
  • black pepper to taste

Instructions

  1. CORN CELERY SALAD:
  2. Wash and chop the celery in small pieces and add to a large mixing bowl. Add the corn and dill together with the onion and dill. Lastly, mix in the yogurt sauce and let cool or serve immediately.
  3. VEGAN YOGURT:
  4. Mix all the ingredients in a bowl and keep cool until you use the sauce.
