Lemon Basil Smoothie

Sometimes I’m asked how I eat healthy vegan food when I’m traveling. Well, there are two things I always do. I bring my own food/snacks (especially if I’m traveling by plane) and I check online on HappyCow if there is anything around where I can eat. But sometimes, life shouldn’t all be about planning. Not that long ago I was in Brussels and on my way to a HappyCow recommendation (Moonfood) I bumped into a cute little lunch cafe named Peck 47 where I enjoyed an amazing smoothie. It was this Lemon Basil Smoothie and it is so fresh and sweet (do ask for a plant based milk in your smoothie otherwise this smoothie is made with cow’s milk). I can’t wait for warmer days, because this smoothie is extra tasty when it is served super cold. I had to make this smoothie at home and share it with you.

This smoothie doesn’t contain any sweeteners, but yet the taste is so sweet and fresh.

Isn’t it amazing that you can find almost anywhere plant based options these days? I never really had any problems while traveling and actually often come home back from a trip with inspiration for a new recipe.

Description

This smoothie is super fresh with lemons, basil leaves and a hint of sweetness from the vanilla. The colder this smoothie the better!


Scale

Ingredients

  • one cup of almond milk or any other milk you prefer
  • one banana (frozen is better)
  • a big dash of vanilla powder or vanilla essence
  • the juice of one lemon or lime
  • 34 fresh basil leaves

Instructions

  1. Blend all ingredients in a blender and serve immediately. For a colder smoothie, use frozen bananas or simply add a few ice cubes. Enjoy!

      Hi Molly, only a bit if the banana is very ripe.
