Summer is coming! Yes, finally. I can already feel the heat as I’m writing this article. The air is warmer. Last night was also such a lovely warm night when I was eating some cherries outside. You can smell and feel the summer in everything. There‘s nothing better than eating according to the weather and seasons, such as light salads and delicious fresh fruits during summer. And of course, we shouldn’t forget the soft serve vegan ice creams. Delicious ice cream without all the sugar, milk and all other chemical additives you would normally find in store bought ice cream. But how to make vegan ice cream without a machine?
However, not everyone has the budget and / or the space for a blender or food processor. No worries! This idea is perfect for you! You only need a fork and a bowl.
This ice cream can be frozen very well, perfect to keep in the firdge and enjoy later.
Of course there are endless possibilities. You could use dried figs or some vanilla powder. Mango is also great to use. Just remember that with this icecream it’s important to always add something of a fat (nuts) and preferably also a banana so your ice cream will not be too thin and watery.

Instructions
- Cut your bananas and dates into pieces and mash them with a fork in a bowl until they are soft and blended. You can decide how big the dates will be in your ice cream. Finally, add the almond butter. It’s also tasty to add almond pieces for a crunchy bite if your almond is not crunchy. Freeze your mixture for at least 4 hours and you’ll have a delicious ice cream!
