No-Bake Vegan Chocolate Brownies with Chocolate Frosting

 

These No-Bake Vegan Chocolate Brownies with frosting are perfectly soft and irresistible. They are free of refined sugars and gluten.

The other day I wanted to make chocolate brownies again, but then I thought: what is better than the chocolate brownies that I have already shared here on TGC? With a birthday coming up I started to experiment a bit and realized that the only thing that can make a vegan chocolate brownie better, is a vegan chocolate brownie with chocolate frosting. These raw frosted chocolate brownies are (of course) way faster to make than the baked chocolate brownies.

WHY YOU SHOULD TRY THESE NO-BAKE BROWNIES

This recipe has the best proportions when it comes to nuts versus raw cacao. These no-bake chocolate brownies have the perfect gooeyness and a subtle crunch. And the frosting (or maybe the fact that these brownies are no-bake) gives it a more intense chocolate taste than the baked version.

I couldn’t stop eating these brownies, so the best is to share them or you’ll end up eating them all by yourself.

These brownies are ready in less than 15 minutes! You just need a bit of patience so they can firm up in the freezer.

INGREDIENTS

These no bake chocolate brownies only require simple ingredients. You don’t have to feel intimiated by the chocolate frosting. Even the chocolate frosting is easy to make.

Pitted dates
For a delicious caramel sweetness.
Walnuts and cashews
These nuts are delicious in no-bake recipes.
Cacao powder

To make brownies you will need a good quality cacao powder.
Vanilla extract

For a subtle sweetness and to contrast the sweetness of the other ingredients.
Date syrup

For texture and sweetness. This will add extra gooeyness to the brownies.
Coconut oil

Coconut oil in combination with the freezer will bind the brownies so they will not fall apart.
Water

You will need just a tiny bit of water to keep the food processor going.

FINAL TIP

If you would like to use less nuts in this recipe, you can replace a part of the cashew nuts with chocolate nibs.

Description

These chocolate brownies with frosting are perfectly soft, gooey and have a very subtle crunch. They are vegan, raw, free of refined sugars, gluten free and very easy to make.


Ingredients

Scale
  • 2 1/2 cups (about 250 grams) pitted Medjool dates
  • 1 cups (90 grams) walnuts
  • half a cup (50 grams) cashews
  • 1/2 cup (50 grams) unsweetened raw cacao powder
  • 2 teaspoons vanilla extract powder
  • 1/4 cup (about 80 grams) pure date syrup (maple syrup is also an option)
  • 1 ½ tablespoon coconut oil
  • 1 ½ tablespoons water

Instructions

BROWNIES

Combine the Medjool dates, walnuts, cashew nuts, 6 tablespoons of cacao powder, 1 teaspoon vanilla, 1 ½ tablespoons water in a food processor. Process until completely smooth.

Line a dish with parchment baking paper. Transfer mixture to dish. Press it firmly into dish with your fingers until the mixture is evenly distributed. Wet a spoon/spatula and fingers so the mixture will not stick to your fingers/spoon.

FROSTING

In a small bowl, combine the remaining cacao powder, remaining vanilla, the date syrup and coconut oil. Stir until mixture forms a paste. Spread paste evenly over the brownies in the baking dish.

Freeze the brownies with frosting for at least 2 hours to set, then cut into squares. Refrigerate any leftovers for up to 10 days, or freeze for up to 6 weeks.


Notes

If you would like to use less nuts you can replace the cashew nuts with chocolate nibs.

  1. Can I substitute honey for syrup? And would liquid vanilla be okay instead of powdered? I would love to make some today, but I don’t want to take my three-year-old to the store.
