Quinoa with Herbs and Zucchini

An easy and quick meal with quinoa and herbs with a hint of lemon.



  • 1 cup of quinoa
  • 2 cups of water
  • one lemon
  • some herbs such as parsley
  • one zucchini (broccoli or cauliflower will also be a good match)


  1. Rinse one cup of quinoa and add two cups of water. Boil it. Meanwhile wash en cook shortly the zucchini. After that chop some herbs like parlsey. Stir the quinoa. Wait a bit for it to boil. After about 15 minutes you can start layering, that is if all the water is gone. The quinoa should be dry. A little bit more vegetables than quinoa is the ideal. But hey if you’re hungry, you have to do what you have to do. Add more quinoa.
  2. So start with the first layer, add some slices zucchini, add some parsley , sprinkle some lemon. Repeat until you have a pile of quinoa and zucchini. End with some herbs and lemon juice. Serve.
