Are you also a fan of side dishes? I believe side dishes are perfect to create a meal with a lot of variety (also in terms of taste), and that is healthy at the same time. A healthy diet is a diet that with lots of variety, and side dishes are perfect for that. There is nothing more beautiful than a table full with different kind of dishes, right? Side dishes shouldn’t scare you off. They are actually quite easy to make. My marinated zucchini is an example how easy and delicious a side dish can be. And with Christmas coming up, I thought we can make it even easier to prepare and create a beautiful range of colors so it will look pretty on the table as well. This side dish is pure health on a plate and is extremely easy to make. But all roasted veggies recipes are delicious, so this Roasted Broccoli with Lemon and Garlic recipe is no exception.
”So I’m supposed to eat lemons slices?” No worries, if you cut them very thin you can totally eat them! They will end up chewy and full of taste, and will of course give a burst of lemon flavor to the roasted broccoli. And sure, if the thought of eating lemons already make you run away, feel free to remove the slices before eating. But you’ll be missing out on an amazing taste experience/combination…..
- 1 medium head of broccoli, broken into florets
- 1 (organic) lemon, thinly sliced (about ⅛-inch slices; use a mandoline slicer for best results)
- 3 cloves garlic, sliced
- 2 tablespoons olive oil
- Celtic sea salt and pepper to taste
- optional: cloves
- Preheat oven to 400ºF.
- Put all the ingredients in a bowl and mix well. Transfer to a baking sheet with parchment paper. Roast for 15-20 minutes, stir after 10 minutes, until the broccoli is tender and just starting to brown.
