If you love sushi, but you just can’t seem to manage to make the perfect sushi roll (or you just don’t have enough patience), then this vegan sushi bowl is a true savior for you. There are absolutely no special skills needed to make this delicous Vegan Sushi Bowl. It’s so simple!

This sushi bowl is healthy, contains the well-known sushi ingredients, is full with flavors, but there is no rolling or wrapping required. Grab all the fresh whole foods from your fridge such as carrots, cucumber, bell peppers, avocado, nori sheets, fluffy brown rice, fava beans and leaves of green cabbage. You can vary endlessly. The important thing is the dressing. This will make this recipe delicious.

I was too excited to make these pictures, because I forgot to add my new fancy chopsticks. Oh well, you can also eat it with a fork or even with your hands. There are no rules in the kitchen.

Whether you are vegan or not, you can still enjoy sushi if you leave out the (raw) fish. Healthy sushi and actually anything with a nori sheet has been one of my favorites lately! If you still feel the desire to roll/wrap, but if you are not an experienced sushi maker or if you want your sushi to be super healthy and clean I would recommend these sushi wraps. You can use any veggies in these wraps that you like.

A bowl of vegan sushi with amazingly healthy ingredients such as avocado, fluffy brown rice and a dressing with tamari, tahini and lime juice.



  • BOWL
  • green cabbage to cover the bowl (optional)
  • 1 cup cooked brown rice
  • julienned or spiralized carrots ( I used two tiny carrots)
  • julienned or spiralized cucumber (1/4 of a cucumber)
  • red bell peppers, I used three super tiny ones in three different colors (red, orange and yellow peppers)
  • half a cup of fava beans or edamame
  • one spring onion cut in little pieces
  • half a lime to sprinkle on the veggies in the bowl
  • half an avocado per bowl
  • chia seeds or sesame seeds to sprinkle on the brown rice
  • a big dash of tamari
  • a teaspoon tahini
  • half a lime to make the sauce as think or thick as you wish


  1. Wash and cut all the vegetables and set aside.
  2. Cook the brown rice (2 cups water : 1 cup dry brown rice) boil for 15 minutes.
  3. Build up your bowl by starting to place the green cabbage in the bowl. This cabbage was huge and covered my entire bowl. Place some brown rice in the middle, then arranging all the other ingredients as shown in the picture.
  4. DRESSING //
  5. Combine all the ingredients in a small glass and whisk.
  6. Pour the dressing on top just before serving.
  7. Enjoy immediately.
