Easy Vegan Parfait

Ingredients 

cashews

biscoff cookies

lemon juice salt sugar vanilla cornstarch water

cherries

vegan yogurt

Step 1.

The first layer is crumbled crunchy cookies. In a small food processor, pulse the cookies until they are crumbled.

Step 2.

For the cashew cream layer, blend the cashews with thick yogurt, lemon juice, and a sweetener. It is essential to soak the cashews in hot water and drain them before blending.

Step 3.

The next layer is the layer with cherries. Heat the cherries in a small pot on medium heat with a sweetener, cornstarch, and water.

Use the cherries before they cool down.

Step 4.

In a glass place a layer of the crumbled cookies.

Step 5.

Followed by a layer of the cashew cream and cherries.

Step 6.

Followed by another layer of the cashew cream.

Step 7.

Finish with a layer of the crumbled cookies.
