Flaxseed Pudding

INGREDIENTS

ground flaxseed/flaxseed meal unsweetened plant milk  maple syrup vanilla-extract salt (optional)

Toppings: soy yogurt, frozen raspberries and chopped walnuts.

STEP 1.

Add half the flaxseed meal and half the amount of plant-based milk to a  mixing bowl. Stir with a fork to combine and remove any clumps.

STEP 2.

Add the remaining flaxseed meal and plant-based milk and stir to combine.

STEP 3.

Next, add the maple syrup and vanilla extract and stir until it’s combined with the flaxseed meal and milk.

STEP 4.

Taste and adjust sweetness if needed.

Cover the bowl and place it in the fridge so it can thicken overnight or for at least 30 minutes. If the consistency is to your liking, serve it right away.

STEP 5.

To make a single serving, scoop out the flaxseed pudding in a bowl or glass jar.

STEP 6.

Add toppings such as yogurt. Yogurt is a delicious contrast with the pudding.

STEP 7.

Other topping options are chopped nuts, berries or cacao nibs.

Frozen berries, such as raspberries, make a great addition to flaxseed pudding.
