Chickpeas Salad Sandwich

cooked chickpeas

celery

walnuts and raisins

parsley & dill

lemon juice

onion and pickles

vegan mayo and mustard

INGREDIENTS

STEP 1.

Chop the herbs, walnuts, onions and pickles and add to a large bowl with the cooked chickpeas.

Next, add all the remaining salad ingredients into the bowl.

Step 2.

Mix until well-combined. For a less textured salad, mash about 1/4 of the chickpeas with a fork and stir to combine.

Add more vegan mayo if needed.

STEP 3.

Serve as a salad or as a sandwich on a slice of bread followed by a piece of lettuce.

Place the chickpeas salad onto the slice of lettuce, then place the other slice of bread on top.
