A tropical and creamy oat breakfast. Easy to make with less than 10 ingredients and 15 minutes. Perfect for meal-prep.

INGREDIENTS

mango (frozen or fresh) unsweetened coconut milk water maple syrup lime juice ground cardamom salt vanilla extract rolled oats ground flax seeds

STEP 1.

To a blender, add the (frozen) mango, coconut milk, water, lime juice,  maple syrup, ground cardamom, vanilla, and salt.

STEP 2.

Blend on high for about  30 seconds to a minute until you have a smooth and thick mango puree.

STEP 3.

Pour the mango puree into the bowl and stir in the rolled oats and ground flax seeds.

STEP 4.

Let sit for at least 1-2 hours or overnight covered in the fridge to allow the oats to soften and absorb the flavors.

STEP 5.

Top with any toppings you like, such as coconut yogurt and mango.

TIP

Any left-overs can be kept in the fridge for up to 4 days (depending on the freshness of the mango).
