An easy recipe to use stale bread in a flavorful salad. A great salad recipe to avoid waste. A refreshing and light option for summer gatherings. This salad is budget-friendly, using stale bread and only a few other simple ingredients.

INGREDIENTS

Tuscan bread (or ciabatta or baguette) ripe tomatoes small red onion bunch of fresh basil leaves water red wine vinegar extra virgin olive oil salt and pepper to taste

STEP 1.

In a large mixing bowl, combine vinegar and water. Mix well to combine.

STEP 2.

Cut the bread into thick cubes. Add the bread cubes into the bowl with the vinegar and water  mixture to let it soak.

STEP 3.

Drain and gently squeeze the bread with your hands to remove excess moisture and crumble.

STEP 4.

Cut the tomatoes into halves or quarters. Slice the onions and place them, along with the tomatoes, in a separate mixing bowl.

STEP 5.

Season the mixture with salt and pepper, then add extra virgin olive oil, crumbled bread and fresh basil.

STEP 6.

Mix to combine all the ingredients.
