Description
The dressing, seeds and fruits make this slaw salad a refreshing summer treat.
Ingredients

- SALAD:
- 4 cups of shredded cabbage {I used purple but a mixture of purple and green is also delicious}
- 1 peach or nectarine, sliced thin
- 1/2 cup fresh parsley, chopped
- 1/2 cup scallions, diced small {optional}
- 3 tablespoons raw apple cider vinegar
- ground black pepper, to taste
- 1/2 cup sunflower seeds
- 2 tablespoons hemps seeds to sprinkle
- DRESSING:
- 1/4 cup cashew butter (or tahini)
- 1/4 cup coconut aminos
- 1 teaspoon Baobab powder
- 1/2 teaspoon grated garlic
- 1/2 teaspoon minced ginger
Instructions
- SALAD:
- Combine all of the ingredients {except sunflower seeds and hempseeds } in a large mixing bowl. Mix thoroughly and plate. Top with sunflower seeds and hempseeds.
- DRESSING:
- Blend all ingredients in a food processor or blender.
- Drizzle over salad.
