Ingredients
Scale
- 1 cup / 160 gr unroasted buckwheat groats
- 1.5 cups / 350 ml water water
- 1 cup / 190 gr / about 10 pieces Medjool dates
- 1.5 tbs cacao powder
- extra cacao powder for rolling (optional)
- 1 tsp vanilla extract (optional)
Instructions
- Begin by rinsing 1 cup of buckwheat groats in a fine-mesh strainer under running water.
- In a medium pot, bring 1.5 cups of water to a boil. Once the water is boiling, add the rinsed buckwheat groats and reduce the heat to low. Simmer for about 12-15 minutes, or until the buckwheat is cooked through. Drain any excess water and set aside to cool.
- In a high-speed blender with a tamper or food processor, add the pitted Medjool dates and process until they form a sticky paste.
- Once the buckwheat has cooled, add it to the food processor with the Medjool date paste. Process until the mixture is well combined and forms a sticky dough. Scrape the sides if needed and blend again.
- Add the cacao powder and vanilla extract (if using) to the blender/food processor and pulse until well combined.
- Once blended it’s best to place the mixture in the fridge for at least 20 minutes so it can become a bit more firm.
- Use a spoon or a cookie scoop to form small balls out of the dough. You should get about 10-12 bites.
- If desired, roll the bites in extra cacao powder to coat the surface, giving them a more decadent look.
- Once all the bites are formed, place them in an airtight container and store in the refrigerator for at least 1 hour to firm up.
- After 1 hour, take them out and they are ready to eat!
