Description

These No Bake Brownie Bites are the perfect snack, quick breakfast or dessert. They are vegan, gluten-free, nut-free, oil-free, and made with only 3 simple ingredients. Creamy, sticky, sweet and super easy to make.


Ingredients

  • 1 cup / 160 gr unroasted buckwheat groats
  • 1.5 cups / 350 ml water water
  • 1 cup / 190 gr / about 10 pieces Medjool dates
  • 1.5 tbs cacao powder
  • extra cacao powder for rolling (optional)
  • 1 tsp vanilla extract (optional)


Instructions

  1. Begin by rinsing 1 cup of buckwheat groats in a fine-mesh strainer under running water.
  2. In a medium pot, bring 1.5 cups of water to a boil. Once the water is boiling, add the rinsed buckwheat groats and reduce the heat to low. Simmer for about 12-15 minutes, or until the buckwheat is cooked through. Drain any excess water and set aside to cool.
  3. In a high-speed blender with a tamper or food processor, add the pitted Medjool dates and process until they form a sticky paste.
  4. Once the buckwheat has cooled, add it to the food processor with the Medjool date paste. Process until the mixture is well combined and forms a sticky dough. Scrape the sides if needed and blend again.
  5. Add the cacao powder and vanilla extract (if using) to the blender/food processor and pulse until well combined.
  6. Once blended it’s best to place the mixture in the fridge for at least 20 minutes so it can become a bit more firm.
  7. Use a spoon or a cookie scoop to form small balls out of the dough. You should get about 10-12 bites.
  8. If desired, roll the bites in extra cacao powder to coat the surface, giving them a more decadent look.
  9. Once all the bites are formed, place them in an airtight container and store in the refrigerator for at least 1 hour to firm up.
  10. After 1 hour, take them out and they are ready to eat!

  • Keep in the fridge to keep the bites firm. It’s best not to keep these bites at room temperature since they will become soft and sticky.
  • Store these bites covered in the refrigerator for best freshness for up to 5 days.
  • If you don’t have a powerful blender or food processor you can soak the dates in warm water for about 20 minutes before using and you can slightly overcook the buckwheat.
