Description

These puffed quinoa cup recipe is about to become your go-to snack. They’re no-bake, naturally sweetened, and come together in just 15 minutes. Made with almond butter, dark chocolate, vanilla, and crispy puffed quinoa, they’re perfect whether you need a protein-packed bite, a wholesome snack, or a simple dessert.


Ingredients

  • 30 g / 1½ cup puffed quinoa
  • 125 g / ½ cup almond butter
  • ½ tsp vanilla extract
  • 200 g / 1 cup dark chocolate (chips)
  • pinch of sea salt
  • optional for sweetness: 2 tbs maple syrup


Instructions

  1. Line a muffin tin with parchment or use silicone baking cups.
  2. Melt the chocolate in a heat-safe bowl using the microwave or a double boiler until smooth.
  3. Stir in the almond butter, salt, and vanilla until well blended, then fold in the puffed quinoa.
  4. Fold in puffed quinoa until all quinoa is coated with chocolate.
  5. Scoop the mixture evenly into 11 cups and press it down gently to shape.
  6. Place in the freezer to set for 2 hours or until firm.
  7. Store the finished cups in the freezer for the best texture.

Notes

  • You can use whatever nut or seed butter you like.
  • If this recipe is too nutty for you, use a bit of maple syrup. It;s a total game changer and will make this snack instantly sweeter and more dessert like.
