POTATO LEEK  SOUP INGREDIENTS

potatoes

coconut  milk

garlic

bay leaf

salt pepper

olive oil

leeks

thyme

veg.  broth

celery

Step 1.

Wash the leeks and chop into half circles.

Step 2.

In a pot, sauté the olive oil, then add the leeks, garlic, and celery.

Add the potatoes, broth, coconut milk to the pot and let simmer until the potatoes are tender.

Step 3.

Blend until the soup is creamy.
