Description
A delicious vegan apple crumble breakfast or dessert with Vegan Eat Natural Absolutely Nuts Granola. Naturally sweetened and easy to make! Soft, warm apples under a crispy layer of granola. Autumn at its best.

- 2 large apples, organic if possible. I used Granny Smith or Honey Crisp apples
- juice of half a lemon or lime
- 1 to 1 1/2 teaspoons of cinnamon or to taste
- 200 ml of water
- a pinch of ground ginger powder (optional)
- a pinch of clove
- optional: pumpkin spice to taste instead of ground cinnamon, clove and ginger
- for serving:
- yogurt of your choice (I served this with almond yoghurt)
- more fruit such as figs
- and if desired to taste more sweet such as coconut sugar or maple syrup (perhaps an option for dessert)
Instructions
- Preheat the oven to 360 ℉.
- Peel the apples, cut in three-quarters, remove the core and slice the apples lengthwise to create thinner slices. You don’t need to be very precise and / or create very thin slices.
- In an oven dish, mix the apples with the spices, water and lemon juice. Combine well.
- Bake for 15-20 minutes (uncovered) or until the apples are tender and soft. Keep an eye on them as they quickly become applesauce. If the apples are too dry, add a small amount of water. In the last 2-3 minutes sprinkle the apples with a generous amount of granola. If the apples are fork tender (especially in the middle of the dish) they are ready.
- This recipe is best fresh and warm out of the oven with for example yogurt and fresh fruit or with ice cream as a dessert. However, you can easily keep any leftovers in the fridge for a few days. Before serving, simply reheat shortly in the oven again.
