If there is a new vegan granola on the market, you sure got my attention. Granola is so deliciously versatile. Recently, Eat Natural announced their new vegan granola with peanuts, almonds and coconut aka Absolutely Nuts Super Granola. After a bowl (ok, a few bowls) Eat Natural granola with oat milk (so delicious!) I wanted to make a seasonal recipe with this granola.
In the new season with an abundance of apples, warming breakfasts and deliciously fragrant warming spices, there is no better recipe than a warm apple crumble with crispy granola. Warm apples can easily be combined with nuts, seeds and spices such as cinnamon and cloves. With this recipe you basically can’t mess up.
Eat Natural Absolutely Nuts Granola
The great thing about this recipe is that you don’t need to think about the taste and combination of ingredients. The Eat Natural Absolutely Nuts Granola contains everything in the right amounts. It contains 17% peanuts, 12% wholegrain oats, 10% shaved coconut, but also some buckwheat, almonds, flaxseeds, and spelt flakes. The granola is furthermore sweetened with coconut blossom nectar and therefore free of white refined sugars or honey (not vegan). So you really only need some spices and apples to create this recipe. This vegan granola is a new extension of the Super Granola from Eat Natural, so make sure you grab the right granola when you are in the store.
Did you know that this granola contains legumes? Can you read it in the above? Exactly! Peanuts! Peanuts are actually not nuts, but legumes.
You can use different type of fruits or a mix of fruits in this recipe. Berries are for example delicious, but warm pears or plums are also amazing from the oven. I find cloves and cinnamon delicious, but you could use anything else you like such as pumpkin spice.
I prefer to serve this apple crumble with coconut- or almond yogurt for breakfast. Yum! Next, I will serve this as a dessert with vegan ice cream. I think that will be a huge success too.

A delicious vegan apple crumble breakfast or dessert with Vegan Eat Natural Absolutely Nuts Granola. Naturally sweetened and easy to make! Soft, warm apples under a crispy layer of granola. Autumn at its best.
- 2 large apples, organic if possible. I used Granny Smith or Honey Crisp apples
- juice of half a lemon or lime
- 1 to 1 1/2 teaspoons of cinnamon or to taste
- 200 ml of water
- a pinch of ground ginger powder (optional)
- a pinch of clove
- optional: pumpkin spice to taste instead of ground cinnamon, clove and ginger
- for serving:
- yogurt of your choice (I served this with almond yoghurt)
- more fruit such as figs
- and if desired to taste more sweet such as coconut sugar or maple syrup (perhaps an option for dessert)
- Preheat the oven to 360 ℉.
- Peel the apples, cut in three-quarters, remove the core and slice the apples lengthwise to create thinner slices. You don’t need to be very precise and / or create very thin slices.
- In an oven dish, mix the apples with the spices, water and lemon juice. Combine well.
- Bake for 15-20 minutes (uncovered) or until the apples are tender and soft. Keep an eye on them as they quickly become applesauce. If the apples are too dry, add a small amount of water. In the last 2-3 minutes sprinkle the apples with a generous amount of granola. If the apples are fork tender (especially in the middle of the dish) they are ready.
- This recipe is best fresh and warm out of the oven with for example yogurt and fresh fruit or with ice cream as a dessert. However, you can easily keep any leftovers in the fridge for a few days. Before serving, simply reheat shortly in the oven again.
