Fudge equals pure melting goodness. A good fudge is soft and truly melts in the mouth. Delicious! I can’t get enough of it.
The fudge I used to eat as a kid, was very sticky and was overloaded with sugar. This lime fudge is better!
The basis recipe only contains two ingredients. However, I liked to experiment with different tastes using sweet, sour and salty. After I tried a few combinations I realized this is really good, a winner!
Macadamia nuts are healthy
Macadamia nuts are a delicious way to alternate nuts and a rich source of vitamins. The macadamia nut is packed with vitamin B1 (really high compared to other nuts). This delicious nut includes the necessary portion of vitamins B6, B2, B3 and B5 as well.
And then the minerals. This round nut is bursting with manganese and copper. However, that does not mean that iron, magnesium, phosphorus, zinc, calcium and potassium are missing.
Did you know that macadamia nuts are good against cardiovascular diseases? Macadamia nuts contain a high percentage of monounsaturated fatty acids (the good fats that do not make us fat like cheap frying oil does) so just like for example almonds, macadamia nuts are great to prevent cardiovascular diseases. By eating macadamia nuts, these nuts will ensure that there is in fact less cholesterol sticking to the wall of the arteries which reduces the risk of atherosclerosis. Also, there’ll be a reduced risk of high blood pressure, lowering the risk of all cardiovascular disease. Win win!
Because of all the omega3 fats, magnesium and manganese the macadamia nut is just like the walnut a real brain food.
Now on to the lime fudge. For this delicious raw vegan lime fudge you’ll need two ingredients:
- One cup of pitted dates (100 grams)
- One cup of (unsalted and unroasted) macadamia nuts (100g)
Then it’s quite simple.
Both ingredients are placed in a food processor, then it will take a few minutes until a ball will form. That means your fudge is ready. Take out the ball and make it flat on a plate. Place it in the freezer. After about 4 hours in the freezer the fudge is ready.
This is the simple version, but the lime version is so much better!
All you have to do is add to the above the juice of half a lime and a pinch of Celtic sea salt. You might find it weird to add, but it’s so tasty!
If the fudge is ready, take it out of the freezer and cut the fidge into squares.
The fudge can be kept frozen for quite a long time, ready to be taken out whenever you have a craving.
