🥄 Ingredient Notes

For this Biscoff overnight oats recipe, you will need simple ingredients, Lotus Biscoff spread and cookies.

  • Lotus Biscoff spread – Biscoff spread (cookie butter) is made from crushed Biscoff cookies and a delicious (and accidentally vegan) spread that adds a sweet and flavorful taste to oats. It has a creamy texture similar to crunchy peanut butter.
  • Rolled oats – When you combine oats with a liquid and soak it overnight it creates a pleasant texture. The oats soften and absorb the flavors of the other ingredients.
  • Chia seeds – These absorb liquid and create a gel-like texture. This gel-like texture helps to thicken the oats and create a pudding-like consistency.
  • Vanilla protein powder – Protein powder helps to boost the protein content of the recipe. Be sure to use a protein powder that doesn’t contain added sugars or artificial ingredients.
  • Soy yogurt – This adds a creamy and fresh texture to the oats. If you don’t have soy yogurt, you can substitute it with any yogurt of your choice.
  • Almond milk – This is used as a liquid ingredient that provides moisture and helps create a creamy consistency. The oats will have a slightly nutty flavor when you add almond milk to them.
  • Lotus Biscoff cookie – Adding a crumbled Lotus cookie to the oats helps to add a crunchy texture and an extra layer of sweetness.
  • Maple syrup (optional): If you prefer your oats to be sweeter, add a drizzle of maple syrup.

🌾 Substitutions and Add-Ins

This Biscoff Lotus overnight oats recipe can be easily customized to suit your preferences. If you don’t have some of the ingredients on hand, you can substitute them with similar ingredients.

  • Instead of almond milk, you can use any other type of milk, such as coconut milk, soy milk, oat milk, or rice milk. And instead of soy yogurt, you can use any other type of yogurt (such as coconut or almond yogurt).
  • Other seeds, such as flaxseeds or hemp, can be used instead of chia seeds.
  • You don’t have to use protein powder. If you do, you can use any flavor you have on hand, but vanilla protein powder combines well with this recipe.
  • Add a small pinch of cinnamon or nutmeg to the oats for a warm, cozy flavor.

📗 Expert Tips

  • For the best texture, use rolled oats instead of quick oats. Rolled oats are the perfect choice for overnight oats because they absorb liquid well and have a nice texture when soaked overnight. Avoid using instant oats or steel-cut oats, as they may not work as well.
  • If you prefer a sweeter breakfast, you can add maple syrup (or any other liquid sweetener) or chopped dates to the oats.
  • If you don’t have time to make this recipe overnight, you can let it sit in the refrigerator for at least 4 hours before serving.
  • Get creative with toppings. I made this recipe with a simple topping (half a Lotus cookie), but feel free to get creative with your toppings. Try adding fresh fruit, nuts, or use more Lotus Biscoff spread for an extra flavor boost.

🥡 How To Store Biscoff Overnight Oats

Overnight oats can be stored in the fridge for up to 5 days in an airtight container. This will prevent the oats from drying out or absorbing any unwanted flavors from the refrigerator.

When you’re ready to serve, give the oats a quick stir and add a splash of almond milk if they become too dry.

💭 Frequently Asked Questions

  • How long do overnight oats have to soak? It’s best to allow the oats to soak overnight to fully absorb the milk and soften. However, the texture is usually also good after 4 hours of soaking.
  • Can I heat overnight oats? If you prefer warm oatmeal, you can heat overnight oats either in the microwave or on the stove. If the oats appear dry, adding a small amount of milk can help.
  • Can I freeze overnight oats? Overnight oats can be frozen. Simply portion them into airtight containers or freezer bags and store them in the freezer. Thaw them in the fridge or microwave (the texture may slightly change).
  • Can I make this recipe gluten-free? Lotus Biscoff cookies and spread are not gluten-free.
