Rooibos Latte (and frothing plant-based milk)

Rooibos latte is my latest favorite drink. I love it warm or iced. This recipe is the simple quick warm version that’s a perfect drink also for later in the day/evening since it’s caffeine-free.

Are you team coffee or team tea? I am not a coffee drinker. And if I do order coffee it’s with such an amazing amount of plant-based milk you can hardly call it a coffee. I do love my teas, Dandy Blend and sometimes also mushroom (cacao) drinks. But a recent ”discovery” is rooibos latte, a delicious caffeine free tea. I love to use the Yogi Tea rooibos (not sponsored) or loose tea. It’s delicious with some vanilla and warm milk. Oh and I can’t wait to make the iced version soon!

This rooibos latte recipe is simple, but you can go crazy with the froth and the additional ingredients. Cinnamon, cardamom, date paste and vanilla are a great match with this recipe.

Did you know that…

Rooibos is actually a herb from South Africa and it means ”red bush”. Rooibos doesn’t have any caffeine, which makes it a great drink for the evening. It also contains very little tannin, so the tea won’t get bitter no matter how long you steep it.

How to froth plant-based milk

I have found two ways to successfully froth any plant-based milk each and every time:

  1. The trick to make any plant-based milk super frothy is something I discovered accidentally and it’s quite simple. All you need to do is froth the milk in a separate glass/mug/container that is cold. You can keep the glass in the fridge or freezer, but for a mild froth I will keep mine under cold running water for a little while. Then pour in the milk, froth with a milk frother and serve or pour it over your rooibos tea. For this method your drink needs to be very hot since the milk will cool your drink a bit. I find this the quickest and most effective way to froth milk.
  2. Of course you could instead follow the warm method, but it involves a saucepan and sometimes that’s just too much effort for a simple drink. For this method you will need to heat up the milk in a saucepan (don’t walk away). Simmer and stir while it heats up. Once the milk is hot, use a frother to create foam. It may not foam as quickly and as firmly as the cold method, but be patient.

This is the milk frother I’m using, but I think I have like 4 different ones somewhere in my kitchen cupboards…

Rooibos latte is an amazing drink served either warm or cold. This is the simple quick warm version that’s a perfect drink also for later in the day/evening since it’s caffeine-free.


  • 1 cup boiling water
  • 12 teaspoons loose rooibos or 1 tea bag rooibos tea
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 cup plant-based milk (I used almond milk)
  • 1 teaspoon date paste
  • Optional: ground cinnamon and cardamom


  1. For the cold froth method:
  2. Boil one cup of water. Place the tea bag in the cup and let steep for about 5 minutes.
  3. Add date syrup, cinnamon, cardamom and vanilla extract. Stir.
  4. Prepare a cold glass. Add in the milk in the cold glass and froth with a milk frother.
  5. Add the frothed milk to the rooibos tea. Sprinkle more cinnamon on the milk foam.
