You might think that as a food blogger I love the more challenging recipes, but I honestly also enjoy making super simple recipes. Especially when it comes to snacks, breakfast or cookies … Recipes that require only 1 bowl, 5 minutes of work and an oven or freezer to finish the job.
I recently returned from a trip to Bali and wanted to bring my own breakfast with me while traveling to enjoy on the plane. I think granola is delicious, but it’s not very convenient when traveling. These Lima granola cookies were such a great idea! The recipe is simple. Pick your favorite granola, combine with banana and nut butter, place in the oven and your giant granola cookies are done.
In 15 minutes these granola cookies are ready to be enjoyed! Making your own cookies was never this easy.

These granola cookies are deliciously nutritious and contain no refined sugars (only naturally occurring sugars), because I have used the delicious granolas from Lima. Read the ingredient list carefully if you are buying any random granola, because you’ll be amazed at how much sugar, oil and other more unnecessary ingredients are hidden in your granola. The Lima granolas are truly amazing.
With the summer right around the corner Lima introduced four delicious organic granolas that are a bit less heavy. Because no one feels like having a heavy breakfast when it’s summer, right? I honestly can’t choose which granola is my favorite. All granolas (Yoga, Protein, Incas and Goji Superfruits) are so delicious and unique.
Lima
I have been a fan of Lima for a number of years due to their wide range of organic plant-based products. The Belgian company Lima has been around for 60 years and is known for their philosophy that when we live better we do that in harmony with ourselves and all other life forms on earth. All Lima products are made with care and respect for the nature and our environment. Lima works from an ecological, CO2 neutral building, where its own laboratory supervises the quality of the products. With these new granolas Lima certainly didn’t disappoint me. I tried the Yoga, Goji Superfruits and Incas granolas.
There is so much more you can do with a good granola like Lima’s (without added sugars and full of nutrients) than just preparing a bowl of granola with milk. These (almost all) gluten-free granolas are also a delicious snack, it’s great in a smoothie bowl as a topping or on your ice cream (such as banana ice cream). I even sprinkled this granola over my salad! So delicious! But my favorite way to enjoy this granola is as a giant granola cookie.
✓ Yoga Granola – The yoga granola contains grains, nuts and fruits and a subtle blend of Ayurvedic herbs. It looks like cornflakes, but it’s definitely not!
✓ Incas Granola- The Incas granola is a mix with quinoa and amaranth. The Incas call this the wonder cereals. Delicious, high in fiber and I love the puffed rice in this mix.
✓ Goji Superfruits Granola – This granola mix contains goji berries and dried superfruits. But in this mix you’ll also find puffed rice, puffed buckwheat, almonds, sunflower seeds and cranberries.
✓ Granola Protein- This mix is all about the focus on proteins such as soya and hemp. But in this gluten-free mix you’ll also find nuts and dried fruits.
Oh and did I mention that all granolas only contain naturally occurring sugars?

Description
Delicious granola cookies are really not that hard to make. All you need is a good granola such as Lima granola, 1 bowl and only two other ingredients. These giant Lima granola cookies are already my summer favorite!
Ingredients
- 2 ripe medium bananas
- 85 gr (1/3 cup) almond butter
- 110 gr Lima Granola (a mix is also possible)
Instructions
- Preheat the oven to 350 F / 180 C.
- Crush the bananas in a large bowl with a fork or use an immersion blender. Then add the almond butter (any other nut butter will also work) and mix so that everything is well combined.
- Add the Lima granola and stir again.
- On a baking tray with parchment paper, divide the granola mixture into 5 equal-sized cookie forms. Press a little to flatten. You can also make 10 smaller cookies.
- Bake for 10-12 minutes or until the tops turn golden brown.
- Remove from the oven and let cool for 2 minutes, then transfer it to a cooling rack to cool completely.
- Store in an airtight container in the refrigerator for 4-5 days or store in the freezer individually packed or in an airtight container for up to 2 months.
Notes
Optional: you could add ½ tsp vanilla extract and /or date syrup. I only add this if I’m making a snack. This is not necessary for breakfast cookies.
You can also use a combination of the Lima granolas.
