This mocktail would be great for any party, whether a bubbling summer party, a birthday celebration, dry January, or New year’s Eve.
This passion fruit mocktail doesn’t only look inviting; it’s delicious. It’s a sweet passion fruit drink with passion fruit juice, passion fruit puree, vanilla, and pineapple juice. The lime juice balances the sweet flavors, and the addition of apple cider vinegar gives it an alcohol-like tangy taste.
WHAT KIND OF DRINK IS A PORNSTAR MARTINI?
According to this source, a Pornstar Martini is a cocktail made with passion fruit puree, passion juice, lime juice, and vanilla-flavored vodka. The drink was created in 2002 and was served with a bubbly Prosecco or Champagne.
This drink was invented by London bartender Douglas Ankrah of the famed LAB (London Academy of Bartending) as a new, elegant and tempting passion fruit-flavored Martini.
Interestingly, a Pornstar Martini Cocktail is not made with Martini but with vodka and it is served in a Martini coupe glass.
WHY IS IT CALLED PORNSTAR MARTINI?
Are you curious to know why this cocktail is called Pornstar Martini Cocktail? Well, I have to disappoint you because there is not a very wild story behind the name.
The passion fruit Martini, served with a sidecar of Champagne, was not named for a specific actor in the porn industry or to make it look more seductive but to highlight the bold and playful allure of the film industry.
If you are shy to order this drink, you can refer to it as a passion fruit martini cocktail.
WHY IS IT SERVED WITH CHAMPAGNE?
Apparently, if we don’t serve it with a sidecar of Champagne, we’ve been drinking Pornstar Martinis the wrong way.
It seems that a Pornstar Martini is supposed to be sipped between a shot of Champagne. Because Champagne (prosecco) is a palette cleanser after the sweet pornstar drink, preparing you for your next sip.
PORNSTAR MARTINI MOCKTAIL INGREDIENTS
The ingredients for an alcoholic Pornstar Martini cocktail are vanilla flavored vodka, passion fruit liqueur (such as Passoã or De Kuyper), passion fruit puree, lime juice, and vanilla syrup.
This mocktail version calls for passion fruit juice, pineapple juice, and (optionally) a bit of apple cider vinegar to make it alcohol-free but still interesting.
Passion fruit puree can sound a bit intimidating, but it’s nothing more than passion fruit without the seeds. It has a thicker consistency than plain passion fruit juice, giving this mocktail a rich flavor and more viscous consistency. It’s therefore not possible to replace it with a fruit juice.
Passion fruit juice is a replacement for passion fruit vodka. If you can find a version without added sugars, use that one. If the juice contains added sugars, you will need to tone down the vanilla syrup a bit to balance accordingly so this mocktail isn’t too sweet.
Pineapple juice is not only an added liquid to add volume to the mocktail and dilute the sweet flavors of the passion fruit a bit, but it also adds a bit of a tart taste. Try to look for a version without added sugars.
Vanilla syrup acts as a replacement for vanilla-flavored vodka. It adds that typical vanilla flavor, but it also gives the sweetness in this drink a deeper and more sophisticated taste.
Fresh lime juice adds a tart, acidic taste, and it’s the perfect ingredient to balance out the sweetness of the fruit juices. This typical zesty sour taste can’t be created with lemons.
Apple cider vinegar is an optional ingredient. It is apple juice with added yeast which turns the sugar in the juice into alcohol. This fermentation is what makes apple juice vinegar, and it adds a sour and acid flavor.
Ice cubes are added to the shaker to cool the drink, but a Pornstar Martini is not served with ice cubes.
All these ingredients together create a flavor similar to alcohol, often described as ‘’bitter and sweet’’.

HOW TO MAKE A PORNSTAR MARTINI MOCKTAIL (step-by-step with photos)
Step 1.
Make the passion fruit puree. Slice a passion fruit open and remove the inside (seeds and pulp) with a teaspoon. Strain the seeds and pulp through a small fine-mesh strainer above a glass or small bowl.
Step 2.
To a cocktail shaker, add the passion fruit puree. Technically you can use any glass, as long as you can shake and strain it later.
Step 3.
Next, add the passion fruit juice and pineapple juice to the shaker with vanilla syrup, lime juice, and apple cider vinegar (optional).
Step 4.
Add ice cubes. Fill the shaker about ¾ and shake well. The cocktail shaker should feel cold, so shake long enough. However, don’t shake for more than a minute, or the ice cubes will start to melt. The cocktail shaker will also become warm from your hands.
Step 5.
Strain and serve the drink. Pour the drink through a double strainer in a coupe/Martini glass. This can be the built-in strainer from the cocktail shaker plus a fine-mesh sieve.
Step 6.
Garnish the drink with a passion fruit sliced in half facing upward into the glass. If you want to, you can keep the tradition and serve it with a glass of non-alcoholic Champagne, prosecco, or sparkling wine.
SUBSTITUTIONS
There are a few substitutions for some ingredients in this recipe. This can be helpful if you are finding it difficult to find specific ingredients.
Instead of pineapple juice, you can use other fruit juices without added sugars. I recommend apple juice (preferably the cloudy version) or grape juice. You will find that most passion fruit juices are sweetened. So, try to look for a brand with the least added sugars and adjust the vanilla syrup accordingly so the drink doesn’t become overly sweet.
You can replace the vanilla syrup with 3 drops of vanilla extract. Using a sweetened passion fruit juice can be a good way to balance the flavors. However, if you are using an unsweetened passion fruit juice, you can mix 1 tablespoon maple syrup with 3 drops of vanilla extract to replicate the same flavor of vanilla syrup.
As for the Champagne sidecar, these days, prosecco makes good alternatives to Champagne that is non-alcoholic. Alternatively, you can serve it with non-alcoholic vodka or non-alcoholic sparkling wine. But you can also keep it very simple and serve it with white grape juice or neutral sparkling kombucha.
FINAL TIPS
The last thing you want to do when throwing a party is to remove the seeds and pulps from several passion fruits through a sieve. My tip is to make the passion fruit puree ahead and keep the passion fruit puree in the fridge for later when you are ready to make the mocktails.
The bigger the ice cubes, the better, and the more vigorous and shorter you shake, the better. A stir will not do here. The key is to cool the drink enough without diluting it with melted ice cubes/water. Smaller ice cubes will melt faster. And shaking the shaker for too long in your warm hands will also melt the ice cubes faster.
The apple cider vinegar will give it a tangier flavor, but it is optional.
This drink is accessible as I could easily make it without a cocktail shaker set. Any jar with a lid will work to shake and cool the drink. A simple small fine-mesh sieve will work great to strain the drink twice before serving it to ensure the perfect texture.

Description
This sweet passion fruit martini cocktail (also known as Pornstar Martini Mocktail) is the most popular modern non-alcoholic drink with passion fruit, lime juice, and vanilla.
Ingredients
- 2 tablespoons / 30 ml passion fruit puree (2 big fresh passion fruits)
- 3 tablespoons / 45 ml passion fruit juice
- 2 tablespoons / 30 ml pineapple juice
- 1 tablespoon / 15 ml vanilla syrup
- 1/2 tablespoon / 7 ml fresh lime juice
- 1 teaspoon / 5 ml apple cider vinegar (optional)
- Ice cubes to fill the cocktail shaker 3/4
- Half a passion fruit to garnish the drink
Instructions
Slice the passion fruits open in half.
Place a small fine-mesh strainer over a small bowl or glass. Remove the passion fruit seeds and pulp in the sieve with a teaspoon. Let it strain in the bowl or glass. Do the same with the other passion fruit until you have 2 tablespoons / 30 ml passion fruit puree. It may help to stir or push the seeds and pulp through the sieve to ensure all passion fruit puree is strained. See the video and photos above for visual instructions.
Add the passion fruit puree to a cocktail shaker. Next, add the passion fruit juice and pineapple juice to the shaker with vanilla syrup, lime juice, and apple cider vinegar (optional). The apple cider vinegar will give it a tangier flavor, but it is optional.
Finally, add large ice cubes until the cocktail shaker is about 3/4 filled with ice cubes.
Close the cocktail shaker and shake for about 30-60 seconds to ensure the drink is served cool (without ice cubes).
Double strain the drink with the built-in sieve from the cocktail shaker and a small fine-mesh sieve. If you don’t use a cocktail shaker, strain the drink twice through a fine-mesh sieve.
This drink is served in a Martini coupe glass garnished with half a passion fruit floating in the drink.
Notes
- Serve the drink with a non-alcoholic Champagne sidecar. These days prosecco makes good alternatives to Champagne that is non-alcoholic. Alternatively, you can serve it with non-alcoholic vodka or non-alcoholic sparkling wine.
- You can make the passion fruit puree ahead and keep the passion fruit puree in the fridge for later.
- The bigger the ice cubes, the better, and the more vigorously and shorter you shake, the better. Stirring the drink with ice cubes will not be enough for this drink. The key to cooling this drink (without diluting it with melted ice cubes/water) is to use big ice cubes and to shake it well and not too long to prevent the ice cubes from melting.
